The identity culture of the South-West is characterized by its quality products, a gastronomy rich in flavors and traditions, to be consumed without moderation and in a festive atmosphere.

Many markets offer you to find local products during your stay. One of the most beautiful markets of France is in Revel on Saturday morning, it is definitely a must to have a look around. But also, on Sunday morning in Montbrun-Bocage, find the atmosphere of yesteryear or in Montréjeau on Monday morning. Taste the cheeses of the Mont Royal “Meilleur Ouvrier de France” and of course get around Toulouse where the halles and open-air markets rhythm the time in the neighborhoods… Poultry, lamb from the Pyrenees, veal from Lauragais, Gasconne from the Pyrenees… it’s up to you to taste them!

Here, the duck is king! Foie gras and magret are on the top of the restaurant menus and on the list of any self-respecting gastronome!

Keep some space on your plate. Don’t forget to try the cassoulet that simmers in the backyard and contains more production secrets than an Airbus !

And what about the Toulouse sausage which is used in the composition of many other typical dishes of the region? It is delicious without any doubt…

Less well-known, the Toulouse violet also plays an important role in many preparations, sweets, ice creams and liqueurs.

We do not joke with the culinary art which passes by the Pétéram de Luchon (preparation based on mutton tripe, veal strawberry and mutton feet, to be cooked during 3 hours) or the pistachio luchonnaise (kind of cassoulet based on mutton, tarbais beans, other meats and vegetables). The cheeses, the tripou, the Occitan omelette, the panset, the tourin (garlic soup), the millas (cereal porridge) amaze the taste buds, just like the millasson de Montréjeau (cooked flan flavoured with orange blossom and lemon zest)  has been delighting gourmets for more than a century.

The purple garlic of the Pays de Cadours, there is nothing to complain about! Very precious, with a pronounced taste, it owes its specificity to the ideal exposure and the microclimate that characterize its terroir. No need to specify the virtues and benefits of this condiment, which is dangerous for couples but so beneficial to health…
